Here is another one!!! Super easy, fun and healthy (in moderation lol). I found this broccoli casserole recipe on www.eatgood4life.com and decided to make it my own. I was truly amazed at how good and tasty this was and new you would love it! You know it’s also a plus when your toddler loves it! 👌🏾
Ingredients:
9-12 oz of broccoli (I used frozen)
2 1/2 cups of uncooked Quinoa
1 cup of mozzarella cheese
1/3 cup of Parmesan cheese
14 oz can of Swanson’s reduced sodium chicken broth
14 oz of water (I used the Swanson’s can)
3 stalks of green onions
2 cups of spinach (Again, I used frozen)
1 tsp. of oregano
1 tsp. of garlic powder
Put frozen broccoli in a bowl and cook for about 3-4 minutes and set aside.
Put Quinoa and chopped green onions in a 9×13 baking dish.
Chicken broth and water mixed in bowl for taste testing (I did not add salt because the broth has enough, however you can add salt to your liking).
Chicken broth, 1/3 cup of Parmesan cheese, spinach, garlic and oregano added to the dish and ready to bake at 350 degrees in the oven for about 30 minutes. After 30 min. You will notice the Quinoa is fully cooked and you can now stir in the broccoli and add mozzarella cheese to cover the top (I sprinkled additional Parmesan too)! Broil for about 3 minutes and voilà!
