Corn & Cauliflower Chowder

When my husband was sick yesterday I decided to make him some soup, but wanted to make something different from “chicken noodle.” In addition, he had recently told me that he didn’t care to eat anymore chicken (this is the only meat he occasionally would eat since I became pescatarian over a year ago). I decided to hit up Pinterest for a basic recipe outline.

I initially was going with a sweet potato chowder because I knew I had a sweet potato left so I went to the store for the rest of the ingredients. After I got home excitedly to start preparing this chowder, I start cutting up my sweet potato and found it was rotten on the inside. 😔 Because I had just came from 2 stores with all 3 kids, there was no way I was going back out with all tree again. After thinking about it, I knew I had some “cauliflower rice” and maybe I could could use that instead.

I looked up 2 different recipes, used what I had, and prayed for the best. In this case, I ended up creating a delicious soup my husband enjoyed and I am pretty darn proud of! 😉 Just a side note, even when my recipes don’t turn out as I expect them to, I get creative by adding spices to it or use it to create another meal. It may not be the best, but it’s definitely edible…at least for one night! Lol

INGREDIENTS

  • 1/2 an onion (or less)
  • 2 tsp minced garlic
  • 12 ounce frozen bag of cauliflower rice
  • 2 cups corn
  • 2 cups vegetable broth
  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • 1/2 cup of your choice of shredded mixed cheese
  • salt and black pepper to taste

Additional Needed: blender and a crockpot

Basically put everything in the crockpot and or a bowl and mix well (except for the shredded cheese, salt and pepper). Pour either 1/2 or all into a blender until puréed (I did all) and then put back into my crockpot added my salt and pepper and cheese) and cooked on high for 2 hours stirring occasionally until ready. Garnish with whatever you like and enjoy!
