Vegan Pop Tart Recipe

Sorry for the delay! I meant to post this a week ago and got busy. I actually made these twice with two different recipes. The first time I made them I used a vegan recipe that I found online, but the crust didn’t not come out right and was a on the chewy side!

The next day I decided not to give up and make them again, but this time using a non vegan recipe and swapping out a few ingredients to make them more of my own and vegan. Crust: -2 ½ cups all-purpose flour -1 Tablespoon granulated sugar -½ teaspoon table salt -1 cup vegan butter cubed -½ cup vegan mayonnaise

Filling:
-7-8oz your favorite preserve (mine came from my neighbor who makes her own strawberry, peach and mixed berry flavors). -2 teaspoons of cornstarch to mix w/preserve

“Egg Wash”:
-1 can of garbanzo beans (about 1/2 the liquid in the can, also known as aquafaba for an “egg wash.”
-1 tsp of vegan milk to mix with aquafaba

Glaze: -1 1/2 cups of powder sugar -2Tbs of vegan milk -1/4 tsp vanilla extract -Food coloring(optional) -Sprinkles


Tip: When you put the top layer of the pop tart on, press down around the filling and then use a fork to press down around the edges to keep the filling from coming out. Put aquafaba wash all over the top. Lastly don’t forget to use a toothpick to poke about 6 holes on top.


*I also played around and made a cinnamon sugar pop tart by taking brown sugar, cinnamon and cornstarch and a little water to form a paste like consistency. I then added some cinnamon to my icing mix. They turned out great!
